The Uttar Pradesh government has earmarked ₹75 crore to document 208 traditional dishes across the state under its One District One Cuisine initiative.

Uttar Pradesh has announced a new initiative under its One District One Cuisine programme, aiming to catalogue 208 traditional dishes from across the state. The government has allocated ₹75 crore to support the mapping, documentation and promotion of these regional specialties.

The funds will be used to conduct field surveys, compile cookbooks, and develop digital platforms that showcase the culinary heritage of each district. Officials say the project will also help preserve recipes that are at risk of being forgotten.

By highlighting local cuisine, the scheme seeks to boost tourism, support small food entrepreneurs and strengthen cultural identity. The state government plans to roll out the programme in phases, starting with the first batch of districts next month.
